Rice Bowls



So this is my first Works for Me Wednesday to participate in. There isn't anything absolutely like rocket science for my first works for me, but I will share what we do with leftover meat. If I fix a roast, boil a chicken, grill pork, or basically any meat (except for ham) and I have leftovers then we have rice bowls with the leftover meat. We usually have these at least once a week for lunch and everybody loves them.

The night before the planned overs I put on a pot of slow cooker dried pinto beans (you could use canned but I like fresh beans). Then when I'm ready to prepare the meal I cook a cup of rice in chicken broth or Better Than Bouillon. I reheat the leftover meat and put the bowls together. Rice on bottom, next beans, next meat, top with chopped tomatoes, sour cream and shredded cheese. YUMMY!!! That is what works for me (and if I can't do all this prep then I open a can of refried beans and slap everything in a tortilla!!!) Enjoy!

Welcome to WFMW! That is a good idea. We usually have such a small amount of leftover meat that it usually gets wasted. I will have to try the rice bowl thing!

So glad you are joining the Works for Me Wednesdays. I think it's fun trying to come up with a creative post and then, of course, discovering all the wonderful things other people share.

Your rice bowls sound great! Do you use a rice cooker or just cook the rice on the stove? I wonder if a rice cooker would be a good investment for our family. We love rice and I have a friend who says she uses it at least twice a week.

Hi Kathy, We just cook the rice on the stove with the chicken broth and a little butter and salt. It is sooo yummy. I have never used a rice cooker I just watch my rice really well so that it doesn't burn.

We do the burrito thing too--in fact, I cook a larger roast in the crockpot for this purpose! Love the bowl idea! Thanks!
