Friday night is family night! It is a night that we all look forward to! Typically we have breakfast for dinner (pancakes, bacon, eggs, and fruit). Then popcorn and games or popcorn and a movie or popcorn and ???. You get the idea we like popcorn. I had always used microwave popcorn, but lately I have tried to get away from all processed food and wanted to make it the Old Fashioned Way (minus the wood burning stove and drying the corn etc).
I forgot how good popcorn can be when it isn't microwaved! We like it lightly buttered and salted but a good friend of mine recently exposed me to kettle corn. Ohhhh it is wonderful! She passed on this wonderful kettle corn recipe. So on your next family night give it a try!
Kettle Corn
1/4 cup WHITE popcorn (the yellow kind just isn't as good!)
1/4 cup oil
1/4 cup sugar
Place oil and corn in a 2 quart pot with a lid (clear lids make it more fun to watch!) Turn the heat on high and wait for the first kernel to pop. When the first kernel pops dump in the sugar (be careful the oil is hot and you don't want it to splash you or a little one). Then shake the pot once the popcorn really starts popping so you don't burn the bottom of the pan. When you remove the popcorn once it is done popping be careful because it is hot and might pop out on you! Let it cool then salt to taste and you will have to break up any big clumps of corn. ENJOY!
